A Simple Meal

It was one of those days when I had no clue what to cook for dinner.  There were no invited guests or special plans for the evening, however, it was an unusual free night where I had plenty of time to play in the kitchen.  I looked in the pantry and in the refrigerator to see what all I had to work with and quickly put together this super easy meal in no time at all…

Fresh Vegetable/Mozzarella Salad

This was so easy to make and so delicious!  Now, please keep in mind, I seldom measure.  I just feel my way through food, so you may do this your own way and that’s perfectly fine.


3 tablespoons olive oil

2-3 tablespoons balsamic vinaigrette

5-6 roma tomatoes

1 jar artichokes

2 cups cubed mozzarella cheese

2- tablespoons capers

1 bunch chopped green onions (about 1 cup)

1 tablespoon minced garlic

3 leaves fresh basil (chopped) or sprinkle some dry basil (you can be adventurous and use cilantro instead)

a pinch of salt and pepper to taste


Chicken & Beef Skewers

Preparation is the only part that requires some work – these cook in no time.  Be sure to chop or cubed your meat as well as your veggies, then skewer them on a grill.  I sprinkle the seasonings while they are grilling.  You can use your favorite seasonings or just salt and black pepper with a hint of cayenne, and garlic powder.  I like to use a Goya product called Adobo(you can find it in any supermarket in the international section).



3 chicken breasts cubed

3 steaks cubed

4 zucchinis chopped

4 squashes chopped

1 large onion chopped


Cheesy Creamed Corn Casserole:

This was probably the easiest part of the meal I had to prepare.  Basically putting together all the ingredients in a glass pan and baking it for about 25 minutes is all you have to do.  Take the creamed corn and mix it with the cream cheese first, and then add the herbs and seasonings to taste.  Then place in the oven and once is done, pour the cheesy onion rings over the mix.  I like to place it back in the oven for a couple of minutes to keep it warm until is time to serve it.  It also makes the onion rings a bit crispier.  Yum!


1 can cheesy onion rings (or you could use the non-cheesy)

2-3 cans cream corn

1 pkg cream cheese

Salt and Pepper (sprinkle to taste and/or add any other spices you like)

1 tablespoon basil, oregano, thyme (or other spices you like)

1 ½ cup real bacon bits

Because it was a simple meal that didn’t really match at all, we finished the meal with fresh watermelon slices.  I am not an expert in the kitchen, but I do enjoy experimenting, especially when I have the time.  Color is a big deal to me, so I can’t help but wonder if I should have had something green with the meal…What do you think?

  1. I’m glad you think so! It was pretty good, but I will tell you that the cheesy onions are very strong (flavor) so be cautious not to use too many, or try half with the original flavor to see which one you like best..
